Petit Fours class

Classes have finally started. First day up is Petit Fours, which are simply small cakes of one or two bites.

Piedemont -hazelnut sponge, a praline buttercream swirl & a crisp almond biscuit.
Mandarin choux puff- a choux puff with a crumble topping, filled with a mandarin diplomat (crème patissiere & cream)
Chocolate lovers - a chocolate biscuit topped with a dome of chocolate mousse containing a peanut crisp. Spray painted with chocolate spray.
Jamaica - a coconut & lime financier topped with a citrus Pate de fruit dome & decorated with lemon & lime zest.
Petit opera crisp - layers of almond sponge & coffee buttercream with a crisp hazelnut feuilletene layer to add crunch

I happened to be at a bench with 2 cousins who were very friendly. We were chatting & got around to where we live & occupation. One of them was in animal health & research, & the other, Danielle, worked at Austin (Austen?) Hospital in Immunology. Danielle had recently been to a Beckman Coulter conference & mentioned she'd met people from Immunology at John Hunter Hospital. She remarked on this because she said they stood out in her mind because they were so friendly!
Glenn & I rounded off the day by going to the Geelong/North Melbourne game at Etihad Stadium. It had been a bit showery in the afternoon, so the roof was closed.

 
The stadium certainly wasn't full, but there were heaps of people around, especially when everyone wants to get home at the same time.
